Foodie Friday

I love picnics.

The simplier the better.

Even if you aren't traveling far, picnic food must be easily transportable. A glass jar is the perfect container for a walnut-apple salad.

Pile everything onto a large tray and join me in the front yard.

Dinner is at six.

Croissants, ham, and cheese.

A vintage beverage carrier, plastic cutlery,melon.
Paper plates and a vintage tablecloth. Why not?

Raspberry vinaigrette.

Foodie Friday: Picnic

I love picnics, old Adirondacks, and vintage tablecloths.
Salads are the perfect picnic food--easily transportable.

A decorative "beehive" to cover food.
Polka dots and plaid.

Fruit and blueberry scones are also easily transportable.

Foodie Friday: Grilled Salmon with Strawberry Salsa

On a hot summer night, try grilled salmon with strawberry salsa.

I marinated the salmon in Ken's Lite Raspberry vinaigrette. Bandwidth grilled. The secret to the grill marks (Bandy says) is to make sure the grill is hot, at least 400 degrees. I didn't ask how he figured this out (didn't see any burns).

Strawberry Salsa

Strawberries

Papaya or mango

Pineapple

Green onions

lemon juice, vinegar, Splenda

The side porch is my hangout.

It's the perfect place to think and write.

Low-Calorie Peach Ice

When the mercury rises, cool down with a low-calorie peach ice.

Low-cal Peach Ice

Serves: 1 Lonely Dieter

1 can lite sliced peaches

Pour juice into a shallow plastic bowl. Freeze two hours or until firm. Using a fork, "rake" the mixture into a serving dish.

If you haven't eaten the sliced peaches, chop and add them to the liquid.
