Pineapple-Upside Down Cake



When it comes to pineapple-upside down cake, I'm sure there are easier recipes, but I've never tasted one quite this delicious. Maybe it's the cast-iron pan, or maybe it's the beaten egg whites. Whenever I serve this cake, there are never any leftovers.

Preheat oven to 350 degrees.
Meanwhile, over a low flame, melt 1/2 cup unsalted butter in a (pre-seasoned) cast-iron skillet. Spoon in 1 cup (packed) brown sugar. Mix and turn off the heat.

Gather:
one 20-ounce can pineapple slices (drain, reserving 1/4 c juice)
Maraschino cheerries
pecan halves
Arrange the pineapple slices over the brown sugar mixture. Cut left-over slices in half, and use them to line the sides of the skillet, cut sides facing in. Stick a cherry in the center of every pineapple circle. Press the pecan halves between the pineapple slices.

Prepare
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
3 egg yolks (reserve whites in separate bowl)
1 cup sugar
1 teaspoon vanilla (real vanilla)

In a large bowl, combine the flour, baking powder, and salt, then run your hands through it. Or, if you are the finicky sort, use a sifter. Plug in an electric mixer and beat the egg yolks until they are thick. Very slowly, add the sugar. Spoon in the flour, baking powder, and salt mixture. Add the vanilla.

Pour the mixture of egg whites into a deep bowl. Beat them with a mixer on high. When stiff peaks form, stop beating. Using a rubber spatula, fold the whites into the batter. Gently spoon the batter over the pineapple.

Bake 50 minutes.
Remove from the oven and invert, without cooling, onto a serving platter.
Yield: 12 servings

  5. I'm looking forward to trying this. I don't think I currently have the proper skillet but that is easily rectified. My hubby LOVES pineapple upside down and I have only made it for him once in 26 years. It's a wonder he has stuck around this long! lol

  6. Hi Gollum, A month ago I lovingly bought ingredients for a pineapple upside-down cake--even pecan halves--for a special event. But I ended up buying a dessert to take. Now I can hardly wait to try your recipe featuring whipped egg whites. Glad you showed the tempting cake photo in your kitchen yesterday, prompting ArtieBen's comment about his favorite dessert!   7. Oh I love all my cast iron. A roast in a cast iron Dutch oven is SOOOOO tender. Mom use to make upside down cake in one of the pans. I thik I have 6. They are great to cook with.I will have to try this recipe.Kathy

  12. Yummy ,the pecans I will try on my next one. It looks like a real winner.
    Like when I added a few raisins to my banana pudding.And then I tried adding 1/2 cup of pineapple tibbits to it. I like to experiment with my recipes.

  17. The pineapple upside down cake looks delicious. I always use a cast iron skillet (got that from my mother) and crushed pineapple. Your kitchen is truly one of the nicest that I have ever seen. It must be a pleasure to work in it.

  19. I've been out of town since last Wednesday so imagine my joy in reading the Gollum Mini-series this evening. The cake is not only yummy sounding, but looks beautiful too. Susan - most antique shops and/or second hand stores have iron skillets that have been seasoned for years. I found one last year and it's been around for a long time, so it's perfectly aged.

  20. I love my iron skillets. They were my grannies for many decades before they became mine. I swear if the house was burning and the dogs were out safely I'd be running inside for the skillets! LOL

  22. The pan is 9" (inside) and 10" at the rim (top). I'm going to do a blog about how to season cast iron. But the best place to buy them, as others have mentioned, is the flea market or antique mall.

    yours are adorable. my partner and i love the BIG variety, but we had friends in south florida with yorkies and they are such sweethearts!!!

    i cannot imagine life without our girls. we have made significant choices in our lives because of them, not doing things we'd love to otherwise. but i cannot imagine life without them.
